For the Braised Beef:

  • 45 lb beef shoulder roast or boston butt roast
  • 2 tablespoons neutral oil
  • 2 cups fresh apple cider (not apple cider vinegar)
  • 2 cups chicken stock or broth
  • 2 tablespoons dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm and slightly tart apples, peeled and cut into wedges
  • kosher salt
  • freshly cracked black pepper

Instructions

  1. Preheat the Oven: Preheat the oven to 325°F.
  2. Prepare the Beef: Trim excess fat from the beef shoulder roast, cut into pieces, and season with salt and pepper.
  3. Sear the Beef: Sear the beef in a dutch oven until browned on all sides.
  4. Prepare Braising Liquid: Whisk together apple cider, stock, dijon, and minced onion. Tie rosemary and thyme together.
  5. Add Ingredients: Pour the braising liquid over the beef, add herbs and garlic, cover, and braise in the oven.
  6. Finish Braising: Add onions and apples, then continue braising until the beef is tender.
  7. Rest and Serve: Let the beef rest in the braising liquid, season to taste, and serve with the juices, apples, and onions.
