For the Braised Beef:
- 4–5 lb beef shoulder roast or boston butt roast
- 2 tablespoons neutral oil
- 2 cups fresh apple cider (not apple cider vinegar)
- 2 cups chicken stock or broth
- 2 tablespoons dijon mustard
- 1 tablespoon dehydrated minced onion
- 1 head of garlic, top sliced off opposite of the root end
- 3 rosemary sprigs
- 4 thyme sprigs
- 1 red onion, cut into thick slices
- 2 firm and slightly tart apples, peeled and cut into wedges

- freshly cracked black pepper
Instructions
- Preheat the Oven: Preheat the oven to 325°F.
- Prepare the Beef: Trim excess fat from the beef shoulder roast, cut into pieces, and season with salt and pepper.
- Sear the Beef: Sear the beef in a dutch oven until browned on all sides.
- Prepare Braising Liquid: Whisk together apple cider, stock, dijon, and minced onion. Tie rosemary and thyme together.
- Add Ingredients: Pour the braising liquid over the beef, add herbs and garlic, cover, and braise in the oven.
- Finish Braising: Add onions and apples, then continue braising until the beef is tender.
- Rest and Serve: Let the beef rest in the braising liquid, season to taste, and serve with the juices, apples, and onions.
