Dry Ingredients:

  • 1 1/4 cups all-purpose flour + 1/4 cup for tossing with blueberries
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda

Additional Ingredients:

  • 1 cup mashed ripe bananas (from about 2 medium/large bananas)
  • 1 cup coarsely grated zucchini (not packed)
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350F. Prepare loaf pan.
  2. Mix together egg, sugars, oil, sour cream, and vanilla in a bowl.
  3. Add dry ingredients to the bowl and mix.
  4. In a separate bowl, coat blueberries with flour.
  5. Combine blueberries with the batter.
