Ingredients
Scale
Casserole Ingredients
- 2 cans (8-count) cinnamon rolls, cut into quarters (icing reserved)
- 1 cup fresh or frozen blueberries
- 4 large eggs
- 1/2 cup (120ml) milk
- 1/4 cup (50g) granulated sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
Optional Ingredients
- 1 tsp lemon zest (optional, for a tangy twist)
- 2 oz cream cheese, cut into cubes (optional, adds creaminess)
Instructions
- Preheat Oven and Prepare Dish: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish, ensuring the casserole won’t stick and will bake evenly.
- Arrange Cinnamon Roll Pieces: Cut the cinnamon rolls into quarters and spread them evenly in the prepared baking dish to form the base of your casserole.
- Add Blueberries: Sprinkle the fresh or frozen blueberries evenly over the cinnamon roll pieces to distribute the fruity flavor throughout the casserole.
- Prepare Egg Mixture: In a medium bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon until fully combined. If using, add lemon zest or cream cheese cubes now for extra flavor complexity.
- Combine and Bake: Pour the egg mixture evenly over the cinnamon rolls and blueberries in the baking dish. Bake in the preheated oven for 35–40 minutes, or until the casserole is golden on top and set in the middle.
- Finish with Icing: Warm the reserved cinnamon roll icing slightly to make it pourable. Drizzle it generously over the baked casserole. Optionally, sprinkle extra powdered sugar or drizzle maple syrup on top for added sweetness.
Notes
- You can use frozen blueberries; just make sure to thaw and drain excess water before sprinkling.
- The cinnamon roll icing melts nicely over the warm casserole for added sweetness and gooey texture.
- Optional lemon zest adds a fresh, tangy brightness to balance the sweetness.
- Cream cheese cubes add a rich, creamy texture that contrasts nicely with the cinnamon rolls.
- Serve warm for the best flavor and texture experience.
