  • Yield: 8 servings 1x

Description

This Blueberry Cinnamon Roll Casserole is a delightful twist on the classic cinnamon roll, combining soft, fluffy pieces with juicy blueberries, bathed in a sweet custard, and baked to golden perfection. Finished with a drizzle of warm icing, it’s an easy, crowd-pleasing breakfast or brunch recipe that marries fruity tartness with rich cinnamon flavor.

Ingredients

Scale

Casserole

  • 2 cans (8-count) cinnamon rolls, cut into quarters (icing reserved)
  • 1 cup fresh or frozen blueberries
  • 4 large eggs
  • 1/2 cup (120ml) milk
  • 1/4 cup (50g) granulated sugar
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon

Optional Add-ins

  • 1 tsp lemon zest (optional, for a tangy twist)
  • 2 oz cream cheese, cut into cubes (optional, for added richness)

Instructions

  1. Preheat and Prepare Dish: Preheat the oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Arrange Cinnamon Rolls and Blueberries: Cut the cinnamon rolls into quarters and spread them evenly in the greased baking dish. Sprinkle the fresh or frozen blueberries evenly over the top of the cinnamon roll pieces.
  3. Mix Custard: In a separate bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, and cinnamon until well combined. If using, add lemon zest or cream cheese cubes now.
  4. Pour Custard and Bake: Pour the egg mixture evenly over the cinnamon rolls and blueberries in the dish. Place in the oven and bake for 35 to 40 minutes, or until the casserole is golden brown on top and the custard is set.
  5. Finish with Icing: While the casserole is baking, warm the reserved cinnamon roll icing slightly to make it drizzle-friendly. Once the casserole is done and slightly cooled, drizzle the warm icing over the top. Optionally, sprinkle extra powdered sugar or drizzle maple syrup for added sweetness.

Notes

  • Use fresh or frozen blueberries; if using frozen, do not thaw before adding.
  • For a tangy flavor, add lemon zest or cream cheese cubes to the custard mixture.
  • Ensure the custard is fully set before removing from the oven to avoid a runny center.
  • Warming the icing slightly helps with even drizzling without clumping.
  • This casserole can be prepared the night before and baked fresh in the morning—cover and refrigerate overnight.
