Cheesecake Layer

Butterscotch Pudding Layer
- 2 boxes (3.4 oz each) instant butterscotch pudding mix
- 3 cups half and half (or whole milk)

Instructions
- Prep: Get a 9×13 inch baking pan and set it aside for assembling the dessert layers later.
- Crust: In a medium mixing bowl, combine graham cracker crumbs, light brown sugar, and melted butter. Mix well until the crumbs are evenly coated. Firmly press this mixture into the bottom of the 9×13 pan to create an even crust layer. Place the pan in the freezer for 20 minutes to set the crust while you prepare the other layers.
- Cheesecake Layer: Using an electric mixer, beat the cream cheese and powdered sugar together in a mixing bowl until smooth and creamy. Fold in the thawed Cool Whip gently using a wooden spoon or spatula until fully combined and fluffy.
- Butterscotch Pudding Layer: In a separate bowl, whisk together the instant butterscotch pudding mix and half and half for 1 to 2 minutes until the mixture begins to thicken. Let it sit for about 3 minutes to allow the pudding to fully thicken.
- Assemble The Butterscotch Lush: Remove the crust from the freezer. Spread the cheesecake layer evenly over the crust, making sure to cover the edges for a firm base. Next, spread the thickened butterscotch pudding evenly over the cheesecake layer. Finally, spread the remaining Cool Whip evenly on top as the last layer.
- Fridge Time: Cover the pan tightly with a lid or plastic wrap and refrigerate the dessert for at least 6 hours, preferably overnight, to allow the layers to set and flavors to meld.
