Cheese Crust

  • 2 cups shredded mozzarella cheese
  • 1 cup shredded cheddar cheese

  • 4 large eggs
  • ½ lb (225 g) breakfast sausage, cooked and crumbled
  • 1 cup shredded mozzarella cheese
  • ½ cup shredded cheddar cheese
  • ¼ cup red onion, diced (optional)
  • 1 tbsp fresh parsley or chives, chopped
  • 1 tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste

Instructions

  1. Preheat Oven: Heat your oven to 400°F (200°C). Line a pizza pan or baking sheet with parchment paper to prevent sticking and for easy cleanup.
  2. Make Cheese Crust: Evenly spread 2 cups of shredded mozzarella and 1 cup of shredded cheddar in a large circle about 10–12 inches in diameter on the prepared pan. This will form the crispy, melty base of your pizza.
  3. Bake Cheese Crust: Place the pan in the preheated oven and bake for 8–10 minutes until the cheese is fully melted, bubbly, and lightly golden around the edges. Remove from the oven carefully.
  4. Add Toppings: Crack the 4 eggs evenly over the hot cheese crust. Sprinkle the cooked and crumbled breakfast sausage along with diced red onions if using. Add the remaining 1 cup mozzarella and ½ cup cheddar cheeses over the toppings. Season with salt, black pepper, and red pepper flakes for a touch of heat.
  5. Bake Again: Return the pizza to the oven and bake for another 10–12 minutes. Bake until the eggs are set to your desired doneness and the cheese on top is melted and bubbly.
  6. Garnish & Serve: Remove the pizza from the oven and sprinkle fresh chopped parsley or chives over the top. Slice into portions and serve hot for a satisfying breakfast or brunch.
