Ingredients

Cheese & Herb Mixture:

200 grams (7 ounces) of cheese (such as cheddar or tasty), sliced
2 tablespoons of fresh rosemary (finely chopped)
2 tablespoons of fresh parsley leaves (finely chopped)
1 teaspoon of dried oregano
1/2 teaspoon of dried thyme
2 garlic cloves (crushed or grated)
3 tablespoons of extra virgin olive oil
1/2 teaspoon of cooking salt or kosher salt

Bread Batter:

2 1/4 cups of plain flour
1 teaspoon of baking soda (or 3 1/2 teaspoons of baking powder)
3/4 teaspoon of cooking salt or kosher salt
1/2 cup of plain yogurt (Greek or regular, full-fat and unsweetened)
3/4 cup of full-fat milk
2 large eggs
3 1/2 tablespoons of unsalted butter, melted
2 tablespoons of olive oil
2 small garlic cloves (crushed or grated)


Instructions

  1. Preheat the oven: Preheat the oven to 180°C (350°F) and prepare a loaf pan.
  2. Prepare the herb mixture: Combine rosemary, parsley, oregano, thyme, garlic, olive oil, and salt in a bowl.
  3. Mix dry ingredients: In a separate bowl, whisk flour, baking soda, and salt.
  4. Combine wet ingredients: In another bowl, mix yogurt, milk, eggs, butter, olive oil, and garlic.
  5. Combine ingredients: Create a well in dry ingredients, add wet ingredients, and mix gently.
  6. Layer the batter: Pour one-third of the batter in the pan, add herb mixture and cheese slices in layers.
  7. Bake: Bake for about 1 hour until golden and cooked through.
  8. Cool and serve: Let it cool before slicing and serving.
