Scale
Main Ingredients
- 12 ounces lasagna noodles
- 3 1/2 cups rotisserie chicken, shredded
- 1 packet ranch seasoning
- 24 ounces cream cheese, softened
- 1 cup buffalo sauce
- 1/2 cup milk
- 2 cups cheddar cheese, shredded
- 2 cups mozzarella cheese, shredded
Optional Toppings
- Ranch dressing
- Green onions, chopped
- Blue cheese crumbles
Instructions
- Mix Cheese Mixture: In a large bowl, blend softened cream cheese with ranch seasoning, buffalo sauce, milk, cheddar cheese, and mozzarella cheese until smooth and easily spreadable.
- Prepare Chicken Mixture: In another bowl, toss the shredded rotisserie chicken with buffalo sauce and ranch seasoning until well coated.
- Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly spray a 9×13 inch baking dish to prevent sticking.
- Start Layering: Spread a small amount of the cheese mixture on the bottom of the dish to prevent sticking. Add a layer of lasagna noodles, making sure they do not overlap.
- Add Chicken and Cheese Layers: Spread half of the chicken mixture evenly over the noodles, then add a layer of the cheese mixture on top. Sprinkle some extra shredded cheese for richness.
- Repeat Layers: Add another layer of noodles, press down lightly, then layer the remaining chicken mixture, followed by more cheese mixture.
- Finish the Layers: Top with a final layer of noodles, then spread the remaining cheese mixture evenly on top. Sprinkle extra shredded cheese and optionally some blue cheese crumbles for added flavor.
- Bake Covered: Cover the baking dish tightly with aluminum foil, ensuring the foil does not touch the cheese. Bake in the preheated oven for 45 minutes.
- Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, allowing the cheese on top to become bubbly and golden brown. Watch carefully to prevent burning.
- Rest Before Serving: Remove from the oven and let the lasagna rest for 15-20 minutes. This resting time sets the layers, making for cleaner slices when serving.
- Serve: Cut into squares and serve drizzled with extra ranch dressing or buffalo sauce if desired. Garnish with chopped green onions for a fresh and colorful finish.
