Ingredients

Scale

Main Ingredients

  • 12 ounces lasagna noodles
  • 3 1/2 cups rotisserie chicken, shredded
  • 1 packet ranch seasoning
  • 24 ounces cream cheese, softened
  • 1 cup buffalo sauce
  • 1/2 cup milk
  • 2 cups cheddar cheese, shredded
  • 2 cups mozzarella cheese, shredded

Optional Toppings

  • Ranch dressing
  • Green onions, chopped
  • Blue cheese crumbles

Instructions

  1. Mix Cheese Mixture: In a large bowl, blend softened cream cheese with ranch seasoning, buffalo sauce, milk, cheddar cheese, and mozzarella cheese until smooth and easily spreadable.
  2. Prepare Chicken Mixture: In another bowl, toss the shredded rotisserie chicken with buffalo sauce and ranch seasoning until well coated.
  3. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Lightly spray a 9×13 inch baking dish to prevent sticking.
  4. Start Layering: Spread a small amount of the cheese mixture on the bottom of the dish to prevent sticking. Add a layer of lasagna noodles, making sure they do not overlap.
  5. Add Chicken and Cheese Layers: Spread half of the chicken mixture evenly over the noodles, then add a layer of the cheese mixture on top. Sprinkle some extra shredded cheese for richness.
  6. Repeat Layers: Add another layer of noodles, press down lightly, then layer the remaining chicken mixture, followed by more cheese mixture.
  7. Finish the Layers: Top with a final layer of noodles, then spread the remaining cheese mixture evenly on top. Sprinkle extra shredded cheese and optionally some blue cheese crumbles for added flavor.
  8. Bake Covered: Cover the baking dish tightly with aluminum foil, ensuring the foil does not touch the cheese. Bake in the preheated oven for 45 minutes.
  9. Bake Uncovered: Remove the foil and continue baking for an additional 10 minutes, allowing the cheese on top to become bubbly and golden brown. Watch carefully to prevent burning.
  10. Rest Before Serving: Remove from the oven and let the lasagna rest for 15-20 minutes. This resting time sets the layers, making for cleaner slices when serving.
  11. Serve: Cut into squares and serve drizzled with extra ranch dressing or buffalo sauce if desired. Garnish with chopped green onions for a fresh and colorful finish.
