  • Author: Lily
  • Total Time: 45 minutes
  • Yield: 6 servings 1x

Description

A comforting and creamy Cheesy Ham and Potato Soup made with tender potatoes, savory ham, and melted cheddar cheese. This hearty soup is perfect for a cozy meal, combining rich flavors with a smooth texture, easy to make on the stovetop.

Ingredients

Scale

Soup Base

  • 2 tablespoons butter
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 4 cups chicken broth
  • 1 cup milk
  • Salt and black pepper to taste

Main Ingredients

  • 4 cups diced potatoes (about 3 large potatoes)
  • 1 1/2 cups diced cooked ham
  • 1 cup shredded cheddar cheese

Instructions

  1. Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is softened and translucent, about 3 minutes.
  2. Make the Roux: Stir in the all-purpose flour and continue cooking for 1 minute, stirring constantly. This forms the roux which will thicken the soup.
  3. Add Broth and Potatoes: Gradually whisk in the chicken broth to avoid lumps, then bring the mixture to a boil. Add the diced potatoes and cook until tender, about 15 to 20 minutes.
  4. Incorporate Ham and Milk: Add the diced cooked ham and pour in the milk. Reduce the heat to low and simmer gently for 10 minutes, stirring occasionally to combine flavors.
  5. Add Cheese and Season: Stir in the shredded cheddar cheese until it melts and creates a creamy texture. Season the soup with salt and black pepper to your taste.
  6. Serve: Serve the soup hot, optionally garnished with extra cheese or chopped green onions for added flavor and presentation.

Notes

  • For a thicker soup, mash some of the potatoes against the side of the pot before adding ham and milk.
  • You can substitute milk with half-and-half or cream for a richer version.
  • Leftover soup can be refrigerated for up to 3 days and reheated gently on the stovetop.
  • Adding chopped green onions or crispy bacon on top can enhance the flavor and texture.
