Ingredients
Scale
Meat and Aromatics
- 1 lb (450g) ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
Cheese and Dairy
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 1 cup milk
Pantry Items and Seasonings
- 12 oz (340g) pasta (penne, rotini, or your choice)
- 1 packet (1 oz) taco seasoning mix
- 1/2 cup salsa
- 1 tablespoon olive oil
- Salt and pepper to taste
Garnish
- Chopped cilantro
- Sliced jalapenos
Instructions
- Cook Pasta: Bring a large pot of salted water to a rolling boil, then add the pasta and cook for 8-10 minutes until al dente. Drain carefully and set aside while reserving any pasta water if desired.
- Sauté Aromatics: Heat olive oil in a large skillet over medium-high heat. Add diced onion and minced garlic, sautéing for about 3 minutes until translucent and fragrant.
- Cook Ground Beef: Add ground beef to the skillet, breaking it into small pieces. Cook for 5-6 minutes until browned and no pink remains. Drain any excess grease from the pan.
- Add Taco Seasoning and Salsa: Sprinkle the taco seasoning evenly over the cooked beef, then pour in salsa. Stir and let simmer for 2 minutes to combine flavors.
- Create Creamy Sauce: Lower the heat to low. Add softened cream cheese and milk to the skillet, stirring continuously until the sauce becomes smooth and creamy. Gradually stir in shredded cheddar and Parmesan cheeses until fully melted and incorporated.
- Combine Pasta and Sauce: Gently fold the cooked pasta into the cheesy sauce, making sure each piece is well coated. Warm the mixture for an additional 2 minutes over low heat.
- Season and Garnish: Taste and season with salt and pepper as desired. Garnish with chopped cilantro and sliced jalapenos for an added burst of flavor. Serve immediately while hot.
Notes
- Use softened cream cheese for easier melting and smoother sauce consistency.
- You can substitute pasta shapes according to your preference or what you have on hand.
- Reserve some pasta water to loosen the sauce if it becomes too thick.
- For a spicier kick, add jalapenos into the sauce or serve extra on the side.
- This dish pairs well with a simple green salad or steamed vegetables for a balanced meal.
