Dry Ingredients:
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 teaspoons baking powder
- 1/4 teaspoon salt
Wet Ingredients:
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 teaspoon vanilla extract
Additional Ingredients:
- 1 cup pitted fresh cherries (or frozen cherries, thawed and drained)
- 1/2 cup all-purpose flour
- 1/3 cup brown sugar
- 1/2 teaspoon ground cinnamon
- 1/4 cup cold unsalted butter, diced
Instructions
- Preheat & Prepare Pan: Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with paper liners.
- Mix Dry Ingredients: In a large bowl, whisk together flour, sugar, baking powder, and salt.
- Combine Wet Ingredients: In another bowl, mix milk, oil, egg, and vanilla until well combined.
- Assemble the Batter: Pour wet ingredients into dry, stir gently until just combined. Fold in cherries.
- Prepare the Cobbler Topping: In a small bowl, mix flour, brown sugar, and cinnamon. Add butter and blend until crumbly.
- Fill & Top Muffins: Spoon batter into muffin cups, fill 2/3 full. Sprinkle topping over each.
- Bake: Bake for 20–25 minutes until a toothpick comes out clean.
- Cool & Serve: Cool in pan for 5 minutes, then transfer to a wire rack. Enjoy warm or at room temperature.
