Bread:

  • 1 stick butter (softened)
  • 1/3 cup white sugar
  • 2/3 cup brown sugar
  • 3 eggs
  • 1/4 tsp peppermint extract
  • 1 1/3 cup all-purpose flour
  • 2/3 cup cocoa powder
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder
  • 3/4 cup milk (whole or 2%)
  • 1/2 cup dark chocolate chips
  • pinch of salt

Frosting:

  • 2 cups powdered sugar
  • 4 tbsp milk (whole or 2%)
  • 1/4 tsp peppermint extract
  • 1 tbsp Greek yogurt
  • 3 tbsp crushed candy canes

Instructions

  1. Preheat the oven to 350°F.
  2. Add room temperature butter to a mixing bowl with the brown and white sugar. Beat with an electric hand mixer until everything is creamed together nicely.

  3. Add in baking soda, baking powder, espresso powder, salt, and cocoa powder.
  4. Mix until well blended.

  5. Beat in eggs and peppermint extract.
  6. Alternate adding the flour and milk in increments, beating the batter between each one.
  7. Fold in dark chocolate chips using a rubber spatula.

  8. Pour the bread batter into a parchment-lined or heavily greased loaf pan.
  9. Bake for 50-60 minutes or until a toothpick comes out clean from the center.
  10. Make the frosting by mixing all the frosting ingredients.
  11. Let the bread cool, frost with the icing, and top with crushed candy cane pieces.
  12. Slice and enjoy!
