Ingredients
Scale
Blondie Batter
- 1 cup butter, melted
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
Cinnamon Swirl
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 1/4 cup butter, melted
Cream Cheese Icing
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
Instructions
- Preheat oven: Preheat the oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper to prevent sticking.
- Prepare the blondie batter: In a large bowl, combine the melted butter and brown sugar, mixing thoroughly. Beat in the eggs and vanilla extract until the mixture is smooth and well combined. Gently fold in the all-purpose flour and salt, taking care not to overmix to maintain a tender texture.
- Make the cinnamon swirl: In a separate bowl, mix together the brown sugar, cinnamon, and melted butter until the mixture resembles wet sand. This will create a flavorful swirl in the blondies.
- Assemble the blondies: Spread the blondie batter evenly into the prepared baking pan. Drop spoonfuls of the cinnamon mixture over the top of the batter. Use a butter knife to gently swirl the cinnamon mixture into the blondie batter, creating a marbled effect.
- Bake: Place the pan in the preheated oven and bake for 25–30 minutes, or until the edges are golden brown and a toothpick inserted near the center comes out mostly clean. Remove from oven and allow to cool completely before icing.
- Make the icing: Beat the softened cream cheese in a bowl until smooth and creamy. Add the powdered sugar, milk (start with 1 tablespoon and add more if needed), and vanilla extract. Mix until the icing is smooth and spreadable. Drizzle the icing over the cooled blondies.
Notes
- Do not overmix the batter—this keeps the blondies tender and chewy.
- Use softened cream cheese for smooth, lump-free icing.
- Adjust the amount of milk in the icing to reach your desired consistency.
- For extra gooeyness, slightly underbake the blondies and let them set while cooling.
- Store leftovers in an airtight container at room temperature for up to 3 days or refrigerated for up to a week.
