  • 4 oz cream cheese or coconut butter
  • 2 tbsp butter, or additional coconut butter
  • 3 tbsp powdered sugar or erythritol
  • 1/2 tsp instant coffee
  • 3 oz chocolate chips or broken up chocolate (optional)

Instructions

  1. Prepare Ingredients: Bring the cream cheese (or coconut butter) and butter (or additional coconut butter) to room temperature so they are soft and easy to mix.
  2. Mix Ingredients: Combine the softened cream cheese and butter with powdered sugar and instant coffee until smooth. Using a hand mixer yields the best, smoothest texture, but stirring with a fork will also work and produce a tasty result.
  3. Form Truffles: Spread the mixture into a container or freeze it for a few minutes until firm enough to scoop. Use a mini cookie scoop to place balls onto a parchment-lined plate.
  4. Freeze Truffles: Freeze the balls until firm, about 20-30 minutes. If you used a container, you can cut the mixture into bars or squares instead of scooping into balls.
  5. Optional Chocolate Dip: Melt the chocolate chips and optionally stir in half a teaspoon of oil for a smoother sauce. Dip each truffle into the melted chocolate and allow the chocolate to set.
  6. Cut and Store: To create bite-sized pieces like in the photos, cut truffles in half as soon as the chocolate sets. Refrigerate or freeze leftovers to keep fresh.
