Shrimp:

  • 1 teaspoon flour
  • 45 cloves garlic, minced
  • 1 cup heavy/whipping cream
  • 1/2 teaspoon lemon juice
  • 1/4 teaspoon Italian seasoning
  • 1/4 cup sun-dried tomatoes, chopped or julienned
  • 12 cups fresh baby spinach, packed
  • Handful fresh basil, cut into thin strips
  • Salt & pepper, to taste

Instructions

  1. Melt the butter: Over medium-high heat in a large skillet, melt the butter. Add the flour and cook for about a minute, stirring until smooth.
  2. Add garlic: Add the minced garlic and cook for about 30 seconds until fragrant.
  3. Prepare the sauce: Stir in the cream, lemon juice, Italian seasoning, and sun-dried tomatoes. Simmer for 2 minutes, adjusting heat if needed.
  4. Cook the shrimp: Add the shrimp and cook for about 5 minutes or until cooked through and the sauce thickens slightly.
  5. Finish the dish: Add the spinach and basil, cooking for an additional 2 minutes. Season with salt and pepper. Serve hot, optionally with extra lemon juice or grated parmesan.
