Instructions

  2. Mix Broth and Spices: In a large bowl, whisk together the chicken broth, nutmeg, kosher salt, black pepper, and cornstarch until the mixture is smooth and well combined.
  3. Combine and Cook: Pour the broth mixture over the vegetables and stir gently to combine all ingredients. Cover the crockpot and cook on HIGH for 2-3 hours or on LOW for 6-7 hours, until the broccoli and vegetables are tender.
  4. Blend Soup (Optional): For a creamier texture, use an immersion blender directly in the crockpot to blend the soup to your desired consistency, leaving some broccoli chunks if preferred.
