  • ½ cup plain yogurt or sour cream
  • 1 cup grated zucchini, lightly squeezed

Glaze:

  • 1 ½ cups powdered sugar
  • 23 tablespoons milk or lemon juice

Instructions

  1. Preheat oven and prepare pan: Preheat oven to 350°F (175°C) and grease/flour an 8×8 inch baking pan.
  2. Mix dry ingredients: Whisk together flour, baking powder, baking soda, and salt in a medium bowl.
  3. Cream butter and sugar: In a large bowl, cream butter and sugar until fluffy.
  4. Add eggs and vanilla: Beat in eggs one at a time, then add vanilla extract.
  5. Prepare yogurt mixture: In a small bowl, combine yogurt/sour cream with lemon juice.
  6. Combine wet and dry: Alternately add dry ingredients and yogurt mixture to wet ingredients, mixing until just combined.
  7. Add zucchini and lemon zest: Gently fold in grated zucchini and lemon zest.
  8. Bake: Pour batter into pan and bake for 30-35 minutes until a toothpick comes out clean.
  9. Cool and glaze: Let bars cool, then drizzle with a glaze made from powdered sugar and milk/lemon juice.
