Kabobs:

  • 1.5 pounds boneless skinless chicken breasts or thighs (cut into 1.5-inch cubes)
  • 1 medium red onion (chopped into large chunks, optional)
  • 1 bell pepper (chopped into large pieces, optional)
  • 1 zucchini (sliced into thick rounds, optional)
  • Wooden or metal skewers

Instructions

  1. Make the Marinade: In a medium bowl, whisk together olive oil, lemon juice, red wine vinegar, garlic, oregano, salt, pepper, and paprika (if using).
  2. Marinate the Chicken: Place chicken pieces in a large bowl or zip-top bag. Pour marinade over the chicken and toss to coat evenly. Cover and refrigerate for at least 30 minutes, preferably 2–8 hours.
  3. Prepare Skewers: If using wooden skewers, soak them in water for 30 minutes. Thread marinated chicken pieces onto skewers, alternating with onion, bell pepper, and zucchini if desired.
  4. Cook the Kabobs: Grill: Preheat grill to medium-high heat. Grill skewers for 10–12 minutes, turning halfway, until chicken is cooked through and has grill marks. Oven: Preheat oven to 425°F (220°C). Line a baking sheet with foil. Bake kabobs for 18–22 minutes, turning once halfway through. Stovetop: Heat a grill pan over medium-high heat. Cook skewers, turning occasionally, until browned and fully cooked, about 10–12 minutes.
  5. Serve: Serve warm with tzatziki, pita, rice, or salad.
