Ingredients
Scale
Firecracker Sauce
- 1/2 cup buffalo sauce
- 2 tbsp coconut aminos
- 3 tbsp coconut sugar
- 2 tsp rice vinegar
- 1 tsp ginger powder
- 2 tsp garlic powder
- Salt and black pepper to taste (omit pepper for AIP)
Main Dish
- 2 tbsp avocado oil
- 1 cup broccoli florets
- Salt and black pepper to taste
- 1 lb ground chicken
- 2 tbsp green onion, sliced
Serving
- 3 cups cauliflower rice (cooked) or steamed rice
Instructions
- Make the Firecracker Sauce: In a bowl, combine buffalo sauce, coconut aminos, coconut sugar, rice vinegar, ginger powder, garlic powder, and salt and black pepper to taste. Stir well until all ingredients are fully incorporated. Taste and adjust seasoning as needed.
- Sauté the Broccoli: Heat avocado oil in a large pan over medium heat until shimmering. Add broccoli florets and sauté for 5 to 7 minutes until they are lightly crisp but tender. Season with salt and pepper to taste. Once cooked, remove broccoli from the pan and set aside.
- Cook the Ground Chicken: In the same pan, add the ground chicken, seasoning lightly with salt and black pepper. Use a spoon or spatula to crumble the chicken as it cooks through evenly. Cook until the chicken is fully browned and no longer pink, about 7-9 minutes.
- Combine Sauce, Broccoli, and Chicken: Return the cooked broccoli to the pan with the ground chicken. Pour the prepared firecracker sauce over the mixture and stir well to coat the chicken and broccoli completely with the sauce. Heat through for another 1-2 minutes to meld the flavors.
- Serve: Spoon the firecracker chicken and broccoli mixture into bowls over cauliflower rice or steamed rice. Garnish with sliced green onions and serve immediately for a spicy, flavorful meal.
Notes
- You can substitute regular soy sauce for coconut aminos if not following a paleo or AIP diet.
- Adjust the amount of buffalo sauce to control the spice level.
- This dish pairs well with either cauliflower rice for a low-carb option or traditional steamed rice for more carbs.
- If you prefer fresher flavors, grated fresh ginger and minced garlic can replace the ginger and garlic powder.
- Omitting black pepper makes this recipe compliant with the Autoimmune Protocol (AIP).
