Firecracker Sauce
- 1/2 cup buffalo sauce
- 2 tbsp coconut aminos
- 3 tbsp coconut sugar
- 2 tsp rice vinegar
- 1 tsp ginger powder
- 2 tsp garlic powder
- Salt and black pepper to taste (omit pepper for AIP)
Main Dish
- 2 tbsp avocado oil
- 1 cup broccoli florets
- Salt and pepper to taste
- 1 lb ground chicken
- 2 tbsp green onion (sliced)
- 3 cups cauliflower rice (cooked) or steamed rice
Instructions
- Prepare Firecracker Sauce: In a bowl, combine buffalo sauce, coconut aminos, coconut sugar, rice vinegar, ginger powder, garlic powder, salt, and black pepper. Stir well to mix all the flavors evenly and adjust seasoning to your preference.
- Sauté Broccoli: Heat avocado oil in a large pan over medium heat until shimmering. Add the broccoli florets and sauté for 5 to 7 minutes until they are lightly crisp and tender. Season with salt and pepper to taste, then set aside.
- Cook Ground Chicken: In the same pan, add the ground chicken and lightly season with salt and pepper. Break the chicken apart as it cooks, stirring occasionally until fully cooked through and no longer pink.
- Combine Sauce and Vegetables: Pour the prepared firecracker sauce and the sautéed broccoli into the pan with the cooked ground chicken. Stir thoroughly so the sauce coats all the ingredients evenly, cooking for another 1 to 2 minutes to heat through.
- Serve: Spoon the chicken and broccoli mixture into bowls over cauliflower rice or steamed rice. Garnish with sliced green onions and serve hot.

- For an AIP-compliant version, omit black pepper from the firecracker sauce.
