- 2 large English cucumbers, thinly sliced
- 1 pint cherry tomatoes, halved
- 1/4 cup thinly sliced red onion

- 1/4 cup fresh basil leaves, torn
- Salt and freshly ground black pepper, to taste
- 2 tablespoons extra virgin olive oil
- 1 tablespoon balsamic vinegar

Instructions
- Place the sliced cucumbers in a colander, sprinkle with a pinch of salt, and let them sit for 15-20 minutes to draw out excess moisture. Pat dry with paper towels.
- Combine drained cucumbers, cherry tomatoes, mozzarella balls, red onion, and torn basil leaves in a large mixing bowl.
- Drizzle the dressing over the salad and toss gently to combine.
While cucumbers drain, halve the cherry tomatoes and mozzarella balls to create bite-sized pieces. Slice the red onion as thinly as possible.
Prepare the dressing by whisking together olive oil, balsamic vinegar, salt, and pepper. Adjust seasoning to taste.
Let the flavors meld for 5 minutes before serving or refrigerate for up to 2 hours for a chilled option.
