For the Potatoes:
- 1 lb baby potatoes, halved or quartered
- 3 tbsp butter, divided
- 1 tbsp olive oil
- Salt and pepper, to taste
- 1 tsp dried thyme
- 1 tsp dried rosemary
For the Steak:
- 1 lb sirloin steak, cut into bite-sized pieces
- Salt and pepper, to taste
For the Garlic Butter:
- 4 cloves garlic, minced
- 1 tbsp butter
Instructions
- Prepare Potatoes: In a large skillet over medium heat, add 1 tbsp butter and olive oil. Cook potatoes with salt, pepper, thyme, and rosemary until golden and fork-tender. Set aside.
- Sear Steak: In the same skillet, add butter and sear steak bites until browned. Set aside.
- Make Garlic Butter: Reduce heat, add butter and garlic. Sauté until fragrant.
- Combine & Serve: Return steak and potatoes to the skillet. Toss in garlic butter, garnish with parsley, and serve warm.
Notes
- For a richer sauce, you can add a splash of beef broth or red wine while deglazing the skillet.
