This Garlic Parmesan Chicken and Potatoes recipe is a delicious one-pan meal featuring tender chicken breasts and crispy baby potatoes baked together with a flavorful garlic butter and Parmesan cheese finish. Perfect for an easy weeknight dinner, it combines savory herbs and spices with a creamy, cheesy topping for a comforting and satisfying dish.

Ingredients

Scale

For the Chicken

  • 1 ½ lbs boneless skinless chicken breasts or thighs, cut into large chunks
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 teaspoon garlic powder

For the Potatoes

  • 1 ½ lbs baby potatoes, halved (or Yukon Gold potatoes, chopped)
  • 2 tablespoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon dried parsley

For the Garlic Parmesan Finish

  • 4 tablespoons unsalted butter, melted
  • 4 cloves garlic, minced
  • ¾ cup freshly grated Parmesan cheese
  • 1 tablespoon chopped fresh parsley (optional, for garnish)

Instructions

  1. Preheat oven: Preheat your oven to 400°F (200°C) and lightly grease a large baking dish or sheet pan to prevent sticking.
  2. Season the chicken: In a bowl, toss the chicken chunks with olive oil, salt, pepper, paprika, Italian seasoning, and garlic powder until evenly coated. Set aside to marinate briefly.
  3. Season the potatoes: In a separate bowl, toss the halved baby potatoes with olive oil, salt, pepper, paprika, and dried parsley to coat them well.
  4. Assemble in baking dish: Spread the seasoned potatoes evenly in the prepared baking dish. Nestle the seasoned chicken pieces among the potatoes to allow even cooking.
  5. Bake initially: Place the baking dish uncovered into the oven and bake for 30 minutes, stirring the potatoes once halfway through to ensure even roasting.
  6. Prepare garlic butter: While the chicken and potatoes are baking, combine the melted butter and minced garlic in a small bowl to create the garlic butter mixture.
  7. Add Parmesan and garlic butter: After 30 minutes of baking, remove the dish from the oven. Drizzle the garlic butter evenly over the chicken and potatoes, then sprinkle them generously with freshly grated Parmesan cheese.
  8. Finish baking: Return the baking dish to the oven and bake for an additional 10 to 15 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are fork-tender.
  9. Garnish and serve: Optionally sprinkle chopped fresh parsley on top before serving. Serve hot for a comforting meal.

Notes

  • For best results, use a meat thermometer to check chicken is fully cooked.
  • Baby potatoes can be substituted with Yukon Golds chopped similarly.
  • If preferred, chicken thighs can be used for a juicier texture.
  • Fresh Parmesan enhances flavor but pre-grated can also be used.
  • For a spicier kick, add a pinch of cayenne pepper to the seasoning mix.
  • This dish is easily doubled for larger families or meal prep.
