  • Diet: Low Fat

Description

This Ground Beef and Spinach Skillet with Feta is a quick and hearty one-pan meal combining savory ground beef, tender spinach, and tangy feta cheese. Perfect for an easy weeknight dinner, it features aromatic herbs and spices that infuse the dish with Mediterranean flavors, topped off with fresh parsley for a bright finish.

Ingredients

Scale

Ground Beef Mixture

  • 1 pound ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 2 cups fresh spinach, chopped
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • Salt and pepper to taste

Toppings & Garnish

  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped (for garnish)

Instructions

  1. Heat the olive oil: Warm the olive oil in a large skillet over medium heat. Add the chopped onion and minced garlic, cooking for 3–4 minutes until the onions soften and become fragrant.
  2. Cook the ground beef: Add the ground beef to the skillet, breaking it apart with a spatula. Cook for 5–7 minutes until browned and cooked through. Drain any excess fat if necessary to reduce greasiness.
  3. Add spinach and spices: Stir in the chopped fresh spinach, dried oregano, paprika, salt, and pepper. Continue cooking for 3–4 minutes until the spinach wilts and all flavors are well combined.
  4. Add feta cheese: Remove the skillet from heat and sprinkle crumbled feta cheese evenly on top, allowing it to gently soften and melt into the warm mixture.
  5. Garnish and serve: Sprinkle freshly chopped parsley over the top for a pop of freshness. Serve the dish warm, on its own or alongside crusty bread.

Notes

  • You can substitute fresh spinach with frozen spinach; just be sure to thaw and drain excess moisture before adding.
  • For a spicier version, add red pepper flakes along with the paprika.
  • Serve with rice, quinoa, or crusty bread to make it a more filling meal.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
  • To keep it lower fat, use lean ground beef (90% lean or higher) and drain fat thoroughly.
