Crispy Potatoes

  • 800g uncooked potatoes, cubed
  • 1 tsp salt
  • 1 tsp garlic powder

Creamy Garlic Parmesan Sauce

  • 120ml milk (any type)
  • 100g light cream cheese (Philadelphia Lightest)
  • 40g grated Parmesan
  • Extra seasoning: salt, garlic, mixed herbs, to taste
  • 50g shredded mozzarella (or any low-fat cheese)
  • Fresh parsley for garnish

Instructions

  1. Cook the Potatoes: Air fry the cubed potatoes at 200°C (400°F) for 18-20 minutes or oven bake at the same temperature for 20-23 minutes until they are golden and crispy. Use olive oil or cooking spray to prevent drying out and for extra crispiness.
  2. Cook the Chicken: In a pan, heat 2 tsp olive oil over medium heat. Add the cubed chicken breast seasoned with minced garlic, onion powder, mixed herbs, chili flakes, paprika, and salt. Sauté for 5-6 minutes until the chicken is fully cooked and lightly browned.
  3. Make It Creamy: Lower the heat to medium-low, then add 120ml milk and 100g light cream cheese to the chicken. Stir continuously until the cream cheese melts completely and the sauce becomes smooth and creamy. Add extra salt, garlic, and mixed herbs to taste.
  4. Combine and Melt Cheese: Mix the crispy potatoes into the creamy chicken mixture evenly. Sprinkle 50g shredded mozzarella on top, then cover and let it cook for 4-5 minutes on low heat, allowing the cheese to melt fully and become gooey.
  5. Garnish and Serve: Remove from heat, garnish the dish with freshly chopped parsley, and serve immediately for a comforting, high-protein meal.
