Instructions
- Preheat Oven: Preheat your oven to 400°F (175°C) and lightly grease a 12-cup muffin tin with cooking spray or butter to prevent sticking.
- Prepare Pancake Batter: In a large mixing bowl, combine the protein pancake mix with water according to package instructions until the batter is smooth.
- Add Sausage: Fold the cooled, cooked breakfast sausage into the batter. Ensure the sausage is completely cooled to avoid warming the batter too much.
- Mix Cheese and Syrup: Gently fold in the shredded sharp cheddar cheese and sugar-free maple syrup. Mix until just combined to keep the bites tender.
- Fill Muffin Cups: Spoon the batter into each muffin cup, filling about 3/4 full to allow the bites to rise without overflowing during baking.
