Description

This Blackstone Cowboy Stir Fry is a hearty and flavorful dish that combines smoked sausage, tender potatoes, and fresh vegetables all cooked on a Blackstone griddle. Ready in just 30 minutes, it’s perfect for a quick weeknight meal packed with smoky, savory, and slightly spicy flavors.

Ingredients

Scale

Meat

  • 1 lb smoked sausage, sliced into 1/2 inch rounds

Vegetables

  • 4 medium Yukon gold potatoes, thinly sliced
  • 1 medium zucchini, sliced into rounds
  • 1 red bell pepper, chopped into bite-sized pieces
  • 1 small onion, chopped

Seasonings & Oils

  • 2 tbsp olive oil or cooking oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp black pepper
  • 1 tsp salt (or to taste)
  • 1/2 tsp crushed red pepper flakes (optional)
  • 1/2 tsp dried oregano or Italian seasoning

Instructions

  1. Preheat the griddle: Preheat your Blackstone griddle to medium-high heat and add 1 tablespoon of oil to prepare for cooking.
  2. Cook potatoes: Add the thinly sliced potatoes to the griddle. Cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
  3. Set potatoes aside: Remove the cooked potatoes from the griddle and set them aside on a plate to keep warm.
  4. Sauté vegetables: Add the remaining oil to the griddle, then toss in zucchini slices, chopped red bell pepper, and chopped onion. Sauté for 5-6 minutes until the vegetables are softened.
  5. Add smoked sausage: Add the sliced smoked sausage to the griddle and cook for 4-5 minutes, stirring occasionally, until the sausage is heated through and slightly browned.
  6. Season the dish: Sprinkle in garlic powder, smoked paprika, black pepper, salt, crushed red pepper flakes (if using), and dried oregano. Stir everything well to evenly distribute the spices.
  7. Combine and finish cooking: Return the cooked potatoes to the griddle and toss all ingredients together. Continue cooking for 2-3 minutes to meld flavors before serving hot.

Notes

  • You can substitute smoked sausage with any smoked or cooked sausage of choice.
  • For spicier flavor, increase crushed red pepper flakes to 1 teaspoon.
  • Use Yukon gold potatoes for the best texture; russet potatoes work but may be less creamy.
  • Ensure your griddle is adequately preheated for even cooking and browning.
  • This dish pairs well with a simple green salad or crusty bread.
