Ingredients
Scale
Meat
- 1 lb smoked sausage, sliced into 1/2 inch rounds
Vegetables
- 4 medium Yukon gold potatoes, thinly sliced
- 1 medium zucchini, sliced into rounds
- 1 red bell pepper, chopped into bite-sized pieces
- 1 small onion, chopped
Seasonings & Oils
- 2 tbsp olive oil or cooking oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt (or to taste)
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 tsp dried oregano or Italian seasoning
Instructions
- Preheat the griddle: Preheat your Blackstone griddle to medium-high heat and add 1 tablespoon of oil to prepare for cooking.
- Cook potatoes: Add the thinly sliced potatoes to the griddle. Cook for 8-10 minutes, stirring occasionally, until they are golden brown and tender.
- Set potatoes aside: Remove the cooked potatoes from the griddle and set them aside on a plate to keep warm.
- Sauté vegetables: Add the remaining oil to the griddle, then toss in zucchini slices, chopped red bell pepper, and chopped onion. Sauté for 5-6 minutes until the vegetables are softened.
- Add smoked sausage: Add the sliced smoked sausage to the griddle and cook for 4-5 minutes, stirring occasionally, until the sausage is heated through and slightly browned.
- Season the dish: Sprinkle in garlic powder, smoked paprika, black pepper, salt, crushed red pepper flakes (if using), and dried oregano. Stir everything well to evenly distribute the spices.
- Combine and finish cooking: Return the cooked potatoes to the griddle and toss all ingredients together. Continue cooking for 2-3 minutes to meld flavors before serving hot.
Notes
- You can substitute smoked sausage with any smoked or cooked sausage of choice.
- For spicier flavor, increase crushed red pepper flakes to 1 teaspoon.
- Use Yukon gold potatoes for the best texture; russet potatoes work but may be less creamy.
- Ensure your griddle is adequately preheated for even cooking and browning.
- This dish pairs well with a simple green salad or crusty bread.
