Description

Indulge in the delightful combination of tangy lemon and sweet raspberry with these Lemon Raspberry Swirl Bars. A perfect treat for any occasion!

Ingredients

Scale

For the Crust:

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted

For the Lemon Filling:

  • 2 cups granulated sugar
  • 4 large eggs
  • 1 cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • ½ cup all-purpose flour
  • ½ teaspoon baking powder

For the Raspberry Swirl:

  • 1 cup fresh raspberries (or thawed frozen raspberries)
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice

Instructions

  1. Preheat the Oven: Set your oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper, allowing some overhang for easy removal later.
  2. Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix well until the crumbs are evenly moistened. Press the mixture firmly into the prepared baking dish to form an even crust layer.
  3. Bake the Crust: Bake the crust in the preheated oven for 10 minutes or until lightly golden. Remove and set aside to cool slightly.
  4. Make the Lemon Filling: In a large mixing bowl, whisk together the sugar and eggs until well combined. Add the lemon juice, lemon zest, flour, and baking powder. Whisk until smooth and all ingredients are incorporated.
  5. Prepare the Raspberry Swirl: In a small bowl, mash the raspberries with the granulated sugar and lemon juice until you achieve a slightly chunky sauce.
  6. Combine and Swirl: Pour the lemon filling over the crust. Drop spoonfuls of the raspberry mixture on top of the lemon filling, then using a knife or skewer, gently swirl the raspberry sauce into the filling, creating a marbled effect.
  7. Bake the Bars: Place the baking dish back in the oven and bake for 30-35 minutes, or until the filling is set and lightly golden on top.
  8. Cool Down: Remove from the oven and allow the bars to cool in the baking dish for about 30 minutes. Once cooled, chill in the refrigerator for an additional hour for easier cutting.
  9. Slice and Serve: Lift the bars out of the baking dish using the parchment overhang. Cut into squares and serve chilled or at room temperature.
