Instructions
- Preheat and cook tater tots: Preheat your air fryer to 380°F. Place the frozen tater tots in the basket and spray lightly with cooking spray if desired. Air fry the tots for 13-15 minutes or until golden and crispy, shaking the basket halfway through cooking to ensure even crisping.
- Cook bacon and sauté onions: While the tots cook, dice the bacon. In a skillet over medium heat, cook the bacon until crispy. Using the rendered bacon grease, add sliced onions and a knob of unsalted butter to the skillet. Sauté the onions, tossing frequently, until they are soft and caramelized to your preference. Add a pinch of salt and an additional knob of butter if desired. Remove from heat once cooked.
- Cook eggs: In the same or a clean skillet, add a drizzle of oil and cook the eggs fried or scrambled according to your preference. Season with salt and pepper.
- Assemble the bowl: Place the crispy tater tots in a bowl, then sprinkle a generous layer of pepper jack cheese over them. Microwave for 15-20 seconds to melt the cheese slightly. Top with the crispy bacon bits, sautéed onions, and cooked eggs.
- Add final toppings: Garnish with diced green onions, red pepper flakes, and arrange the sliced avocado on the side. Optionally serve with ketchup or hot sauce for extra flavor.
