  • Author: Lily
  • Total Time: 30 minutes
  • Yield: 2 servings 1x

Description

A flavorful and hearty loaded tater tot bowl perfect for breakfast or brunch, featuring crispy air-fried tater tots topped with bacon, sautéed onions, pepper jack cheese, avocado slices, and a fried or scrambled egg.

Ingredients

Scale

Base

  • Frozen tater tots or hashbrowns – 1 package (about 12 oz)

Protein

  • 2 eggs, scrambled or fried
  • 24 strips bacon, diced

Vegetables & Toppings

  • 1/3 yellow onion, thinly sliced
  • 1/2 avocado, thinly sliced
  • 1 stalk green onions, diced

Cheese

  • Pepper jack cheese – amount to preference (about 1/4 to 1/3 cup shredded)

Fats & Oils

  • 12 tbsp oil (for frying eggs and sautéing)
  • 1 tbsp unsalted butter (for sautéing onions)
  • Cooking spray (optional, for air frying tots)

Seasonings

  • Salt and pepper to taste
  • Red pepper flakes to taste

Instructions

  1. Preheat and cook tater tots: Preheat your air fryer to 380°F. Place the frozen tater tots in the basket and spray lightly with cooking spray if desired. Air fry the tots for 13-15 minutes or until golden and crispy, shaking the basket halfway through cooking to ensure even crisping.
  2. Cook bacon and sauté onions: While the tots cook, dice the bacon. In a skillet over medium heat, cook the bacon until crispy. Using the rendered bacon grease, add sliced onions and a knob of unsalted butter to the skillet. Sauté the onions, tossing frequently, until they are soft and caramelized to your preference. Add a pinch of salt and an additional knob of butter if desired. Remove from heat once cooked.
  3. Cook eggs: In the same or a clean skillet, add a drizzle of oil and cook the eggs fried or scrambled according to your preference. Season with salt and pepper.
  4. Assemble the bowl: Place the crispy tater tots in a bowl, then sprinkle a generous layer of pepper jack cheese over them. Microwave for 15-20 seconds to melt the cheese slightly. Top with the crispy bacon bits, sautéed onions, and cooked eggs.
  5. Add final toppings: Garnish with diced green onions, red pepper flakes, and arrange the sliced avocado on the side. Optionally serve with ketchup or hot sauce for extra flavor.
  6. Enjoy: Serve immediately and enjoy your loaded tater tot bowl as a satisfying breakfast or brunch meal.

Notes

  • Cooking times for air fryer may vary depending on make and model—adjust accordingly for desired crispiness.
  • Use unsalted butter to better control seasoning and reduce sodium content.
  • Substitute bacon with turkey bacon or vegetarian bacon for different dietary needs.
  • Feel free to add other toppings such as sour cream, salsa, or jalapeños for extra flavor.
  • This recipe works well with hashbrowns as an alternative to tater tots.
