  • 1 tsp black pepper
  • 1 cup freshly grated parmesan cheese
  • 2 cups baby spinach, chopped

For the Pasta:

  • 1 19 oz bag frozen cheese tortellini, pre-boiled until just tender

Garnish (Optional):

  • Chopped parsley
  • Extra grated parmesan

Instructions

  1. Step 1 – Cook the Chicken: In a bowl, season chicken with black pepper, paprika, and Italian seasoning. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until golden brown and fully cooked (6–8 minutes). Remove from skillet and set aside.
  2. Step 2 – Build the Sauce: Lower heat to medium-low. Melt butter in the same skillet. Add garlic and sun-dried tomatoes. Sauté for 30 seconds until fragrant. Pour in chicken broth, heavy cream, Italian seasoning, black pepper, and paprika. Stir and let it simmer gently. Slowly whisk in parmesan cheese until melted and smooth.
  3. Step 3 – Combine Everything: Add cooked chicken, baby spinach, and pre-cooked tortellini into the sauce. Stir gently and let simmer for 5 minutes, until spinach wilts and pasta is heated through. Turn off heat and let rest for 2 minutes to thicken the sauce.
  4. Step 4 – Serve and Enjoy: Garnish with parsley and more parmesan if desired. Serve warm with garlic bread or salad on the side.
