- 2 tbsp (42g) honey
- 1/4 tsp peppermint extract
- 1–2 tbsp (15-30ml) unsweetened almond milk (if needed)
Instructions
- Combine Ingredients: In a large mixing bowl, combine the rolled oats, almond butter, honey, vanilla protein powder, and peppermint extract. Mix thoroughly until all ingredients are well incorporated.
- Adjust Consistency: If the mixture feels too dry and crumbly, add 1 tablespoon of unsweetened almond milk at a time and mix until you reach a consistency sticky enough to form balls without falling apart.
- Add Chocolate Chips: Gently fold the mini dark chocolate chips into the mixture to distribute them evenly without breaking them apart.
- Form Balls: Using a tablespoon, scoop out portions of the mixture and roll them between your palms to form smooth, 1-inch diameter balls. Continue until all the mixture is used.
