A flavorful and easy-to-make dish, Mississippi Chicken & Potatoes combines tender chicken, crispy potatoes, and gooey cheese with a hint of tangy pepperoncinis for a delicious meal.

For Potatoes:
- 4 medium/large potatoes, peeled and cubed
- 1 tbsp olive oil
- Salt, pepper, garlic powder, paprika to taste
For Chicken:
- 2 chicken breasts, cubed
- 1 tbsp olive oil
- 1/2 packet Aus Ju Gravy Mix
- 1/2 packet Ranch seasoning
- 2 tbsp butter
- Pepperoncinis or banana peppers, to taste
- 1 cup shredded mozzarella cheese
Instructions
- Prepare Potatoes: Toss potatoes with olive oil, salt, pepper, garlic powder, and paprika. Cook in air fryer at 400°F for about 20 minutes, shaking occasionally.
- Cook Chicken: Season chicken with olive oil, Aus Ju Gravy Mix, and Ranch seasoning. Cook in a skillet with butter until done.
- Combine: Add cooked potatoes to the skillet with chicken. Mix well.
- Top & Melt: Sprinkle with mozzarella cheese and pepperoncinis. Broil briefly to melt cheese, or cover and let sit until melted.
