This Mississippi Chicken & Potatoes recipe combines tender chicken and flavorful potatoes topped with melted mozzarella cheese, creating a delicious and hearty dish that is easy to prepare.


Ingredients

Chicken:

  • 2 chicken breasts

Potatoes:

  • 4 medium/large potatoes

Seasonings:

  • olive oil, salt, pepper, garlic powder, paprika
  • 1 TBSP Aus Ju Gravy Mix
  • 1 TBSP Ranch seasoning (half a packet)

Other:

  • 2 TBSP butter
  • Pepperoncinis or banana peppers
  • 1 cup shredded mozzarella cheese

Instructions

  1. Prepare Potatoes: Wash, peel, and cube the potatoes. Toss with olive oil, salt, pepper, garlic powder, and paprika. Cook in air fryer at 400°F for about 20 minutes, shaking occasionally.
  2. Cook Chicken: Cut chicken into cubes, season with olive oil, half of Aus Ju Gravy Mix, and Ranch seasoning. Cook in a skillet over medium-high heat with butter.
  3. Combine: Once chicken and potatoes are cooked, add potatoes to the skillet. Stir well.
  4. Finish: Top with shredded mozzarella cheese and pepperoncinis. Broil in the oven briefly to melt the cheese or cover until melted. Enjoy!
