Ingredients
Scale
Pancake Batter
- 200 grams soft white wheat berries (1 1/2 cups whole wheat flour)
- 1 1/2 cups milk
- 5 tbsp. avocado oil
- 2 eggs
- 1 tsp. baking powder
- 1/2 tsp. salt
Filling
- 1 package sausage
- 4 cups shredded hash brown potatoes
- 4 eggs
- Shredded cheese (quantity to taste)
- Salt & pepper (to taste)
- Maple syrup (for drizzling)
Instructions
- Prepare pancake batter: In a mixing bowl, combine the whole wheat flour, baking powder, salt, milk, avocado oil, and eggs. Whisk thoroughly until the batter is smooth and well combined.
- Cook sausage and hash browns: Heat a griddle or large skillet over medium heat and add a drizzle of your favorite oil. Fry the sausage, breaking it up as it cooks, along with the shredded hash brown potatoes. Sprinkle salt and pepper on the potatoes as they cook. Stir and flip occasionally to ensure even browning.
- Cook pancakes: When the sausage and potatoes are nearly cooked through, push them to the side of the griddle and reduce heat to low. Add more oil if needed, then pour scoops of pancake batter onto the griddle, forming pancakes. Cook until bubbles appear on the surface, then flip and cook until golden brown and cooked through, about 2-3 minutes per side.
- Scramble eggs: In a bowl, whisk the eggs with a splash of milk, salt, and pepper if desired. Scramble the eggs in a separate pan or on the griddle by cooking over medium-low heat. Add shredded cheese as they cook until melted and eggs are soft but set.
- Assemble the tacos: Use the cooked pancakes as soft taco shells. Fill each pancake with a generous amount of fried potatoes, sausage, and scrambled eggs. Drizzle with maple syrup on top for a perfect balance of savory and sweet.
- Serve and enjoy: Fold the pancakes around the filling like tacos and serve immediately while warm.
Notes
- You can substitute the sausage with a vegetarian or turkey option for a lighter version.
- Adjust the amount of cheese and maple syrup to your taste preferences.
- For extra crispiness, use a cast iron skillet when frying the hash browns and sausage.
- These tacos can be customized with additional toppings such as avocado, salsa, or hot sauce if desired.
- To keep pancakes warm while preparing the rest, place them on a baking sheet in a low oven (about 200°F) covered loosely with foil.
