Description

Pancake Poppers are delightful, bite-sized baked pancakes that are fluffy, golden, and perfect for a quick breakfast or brunch. Made in a muffin tin, these poppers are easy to prepare and customizable with your favorite toppings like fresh fruit, syrup, and powdered sugar.

Ingredients

Scale

Wet Ingredients

  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/2 cup melted butter (divided for greasing muffin tin)

Dry Ingredients

  • 1 cup all-purpose flour
  • 1 teaspoon salt

Toppings (optional)

  • Fresh fruit
  • Syrup
  • Powdered sugar
  • Your favorite pancake toppings

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to ensure it is hot and ready for baking the pancake poppers evenly.
  2. Prepare Batter: In a blender, combine 6 eggs, 1 cup milk, 1 cup flour, 1 teaspoon salt, and 1 teaspoon vanilla extract. Blend on high for 3-5 minutes until the batter is smooth and the eggs are well beaten.
  3. Grease Muffin Tin: Pour about 1/2 teaspoon of melted butter into the bottom of each muffin cup to prevent sticking and add flavor.
  4. Fill and Bake: Pour the batter evenly into each muffin cavity, filling them mostly full. Bake in the preheated oven for 12-15 minutes, or until the sides puff up and become golden brown.
  5. Serve: Remove the pancake poppers from the oven and serve hot. Top with fresh fruit, syrup, powdered sugar, or any favorite pancake toppings you like.

Notes

  • You can substitute milk with almond or oat milk for a dairy-free version.
  • For extra fluffy poppers, separate the eggs and whip the egg whites before folding them back into the batter.
  • Make sure to grease each muffin hole well to avoid sticking.
  • Try adding cinnamon or nutmeg to the batter for added flavor.
  • Leftover pancake poppers can be reheated in a toaster oven or microwave.
