Cake Batter:

  • 2 cups all-purpose flour

  • 1 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk

Peach Topping:

  • 4 ripe peaches, peeled and sliced (about 4 cups)
  • 1/4 cup packed light brown sugar
  • 2 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Streusel Topping:

  • 1/2 cup all-purpose flour
  • 1/4 cup packed light brown sugar
  • 1/4 cup cold unsalted butter, cut into small pieces
  • 1/4 cup chopped pecans or walnuts (optional)
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Prepare the Peach Topping: Peel and slice peaches into 1/4-inch thick slices. Toss peaches with 1/4 cup brown sugar, melted butter, cinnamon, and nutmeg. Set aside.
  2. Make the Cake Batter: Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  3. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream together softened butter, granulated sugar, and brown sugar until light and fluffy (3-5 minutes).
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, alternating with buttermilk, beginning and ending with dry ingredients. Mix until just combined. Do not overmix.
  7. Assemble and Bake: Pour batter into prepared pan and spread evenly. Arrange peach slices over the batter. If making streusel, combine streusel ingredients and sprinkle over peaches.
  8. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let cool in the pan for at least 15-20 minutes before slicing and serving.
