Description

These Protein Muffins are a simple and nutritious snack made with just five main ingredients. Perfect for a quick breakfast or post-workout treat, they combine vanilla protein powder, almond flour, peanut butter, and unsweetened applesauce to create moist, flavorful muffins with an optional chocolate chip twist. Gluten-free and packed with protein, they offer a delicious, healthy way to fuel your day.

Ingredients

Scale

Main Ingredients

  • 2 scoops vanilla protein powder (6467 grams)
  • 1 teaspoon baking powder
  • 1/2 cup almond flour
  • 1/2 cup peanut butter (or any nut or seed butter)
  • 1 cup unsweetened applesauce
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat and Prepare: Preheat your oven to 180°C (350°F) and line a muffin tin with 8 muffin liners to prepare for baking.
  2. Mix Dry Ingredients: In a large mixing bowl, combine the vanilla protein powder, almond flour, and baking powder. Stir well to evenly distribute the leavening agent and protein powder.
  3. Add Wet Ingredients: Add the peanut butter and unsweetened applesauce to the bowl. Mix thoroughly until the batter is smooth and fully combined. Gently fold in the chocolate chips if using.
  4. Fill Muffin Liners: Divide the batter evenly among the muffin liners, filling each about 3/4 full to allow room for rising.
  5. Bake: Bake the muffins for 10-12 minutes. Around the 8-minute mark, check if the tops are browning too quickly, and cover with tinfoil if necessary to prevent burning.
  6. Cool: Once baked, remove the muffins from the oven and let them cool for 5 minutes in the tin. Then transfer them to a wire rack to cool completely before serving.

Notes

  • Use any nut or seed butter as a substitute for peanut butter to adjust flavor and allergen preferences.
  • For a dairy-free option, ensure your protein powder is plant-based.
  • If you want to reduce sugar, omit chocolate chips or use a sugar-free alternative.
  • Check your protein powder’s scoop size and grams to ensure accurate measurement.
  • Muffins are best eaten within 2-3 days stored in an airtight container or freeze for longer storage.
