Pizza Dough:
- 1 pound pizza dough (store-bought or homemade), at room temperature
Garlic Herb Oil:
- 1/2 cup olive oil, plus more for brushing
- 4 cloves garlic, minced

- 1/4 teaspoon red pepper flakes (optional)
Cheese and Toppings:
- 1/2 cup grated Parmesan cheese
- 2 cups shredded mozzarella cheese
- 1/4 cup chopped fresh parsley
- Pizza sauce, for serving (optional)
Instructions
- Prepare Garlic Herb Oil: In a small bowl, combine the 1/2 cup olive oil, minced garlic, dried oregano, dried basil, and red pepper flakes (if using). Let sit for at least 15 minutes.
- Preheat: Preheat oven to 375°F (190°C). Grease a 9-inch springform pan or deep oven-safe skillet with olive oil.
- Roll Dough: On a lightly floured surface, roll out the pizza dough into a large rectangle, about 12×18 inches.
- Brush with Oil: Brush the dough with the garlic herb oil, reserving some for later.
- Sprinkle Cheese: Sprinkle Parmesan and mozzarella cheese over the dough.
- Cut Strips: Cut the dough into strips, stack, and cut into squares.
- Arrange in Pan: Place dough squares in the pan standing up.
- Repeat: Fill the pan with remaining dough.
- Brush Top: Brush with remaining oil.
- Bake: Cover with foil and bake for 25 minutes, then uncover and bake for 15-20 more minutes.
- Cool: Let cool for 10 minutes.
- Serve: Sprinkle with parsley, remove from pan, and serve warm with pizza sauce.
