For Dressing:
- 2.5 tbsp Dijon mustard
- 2 tbsp mayonnaise

- ¼ to ½ tsp coarse sea salt
- ½ cup olive oil
Instructions
- For the soft-boiled jammy eggs: Bring a pot of water to a boil, then simmer the eggs for about 6 ½ minutes. Peel once cool.
- For the salad dressing: Whisk together all dressing ingredients to emulsify. Store in the fridge.
- Assemble the smoked salmon salad: Toss baby greens, smoked salmon, and eggs in a bowl. Drizzle with dressing, season, and serve with lemon wedges.
