Cream Cheese Mixture:
- 4 ounces cream cheese, softened
- 1 large egg
- 1 tablespoon olive oil
- ½ teaspoon dried dill
Spinach Filling:
- 2 cups fresh spinach, chopped and packed
- ¾ cup crumbled feta
- 2 teaspoons bacon bits
- Salt and pepper, to taste
Additional:
- 1 sheet frozen puff pastry, thawed
- 1 tablespoon butter, melted
Instructions
- Prepare Muffin Pan: Spray 9 cups in a muffin pan with cooking spray.
- Mix Cream Cheese: Soften cream cheese in the microwave, then mix with egg, oil, and dill until well combined.
- Combine Fillings: In a separate bowl, mix spinach, feta, and bacon. Pour cream cheese mixture over and season with salt and pepper. Mix well.
- Assemble Puffs: Cut pastry sheet into squares, line muffin cups, fill with spinach mixture, and fold pastry over the filling. Brush with melted butter.
- Bake: Bake at 400°F for about 20 minutes until golden and puffy. Cool, then remove from pan.
