Cream Cheese Mixture:

  • 4 ounces cream cheese, softened
  • 1 large egg
  • 1 tablespoon olive oil
  • ½ teaspoon dried dill

Spinach Filling:

  • 2 cups fresh spinach, chopped and packed
  • ¾ cup crumbled feta
  • 2 teaspoons bacon bits
  • Salt and pepper, to taste

Additional:

  • 1 sheet frozen puff pastry, thawed
  • 1 tablespoon butter, melted

Instructions

  1. Prepare Muffin Pan: Spray 9 cups in a muffin pan with cooking spray.
  2. Mix Cream Cheese: Soften cream cheese in the microwave, then mix with egg, oil, and dill until well combined.
  3. Combine Fillings: In a separate bowl, mix spinach, feta, and bacon. Pour cream cheese mixture over and season with salt and pepper. Mix well.
  4. Assemble Puffs: Cut pastry sheet into squares, line muffin cups, fill with spinach mixture, and fold pastry over the filling. Brush with melted butter.
  5. Bake: Bake at 400°F for about 20 minutes until golden and puffy. Cool, then remove from pan.
