Ingredients

Scale

Strawberry Cake Batter

  • 1 box (450 g) strawberry cake mix
  • 1 cup (150 g) fresh strawberries, sliced
  • Water (as per cake mix instructions, approximately 1 cup)
  • Oil (as per cake mix instructions, approximately 1/3 cup)
  • Eggs (as per cake mix instructions, typically 3 large eggs)

Cream Cheese Topping

  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (100 g) granulated sugar
  • 1/4 cup (60 ml) fresh lemon juice
  • 1 cup (120 g) powdered sugar
  • 1 tsp vanilla extract

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the cake.
  2. Mix Cake Batter: In a large bowl, combine the strawberry cake mix, water, oil, and eggs as directed on the cake mix box, stirring just until all ingredients are blended but not overmixed to keep the cake tender.
  3. Add Fresh Strawberries: Gently fold the sliced fresh strawberries into the batter to distribute them evenly without crushing.
  4. Prepare Baking Dish: Grease a 9×13-inch baking dish to prevent sticking, then pour in the prepared batter and smooth the top evenly.
  5. Bake Cake Base: Place the baking dish in the preheated oven and bake for 30-35 minutes. Check doneness by inserting a toothpick in the center; it should come out clean.
  6. Make Cream Cheese Mixture: While the cake bakes, blend softened cream cheese, granulated sugar, lemon juice, powdered sugar, and vanilla extract until smooth and creamy.
  7. Top with Cream Cheese Layer: Remove the cake from the oven and pour the cream cheese mixture evenly over the top of the warm cake.
  8. Finish Baking: Return the cake to the oven and bake for an additional 15-20 minutes until the cream cheese topping is set and the edges turn golden brown.
  9. Cool the Cake: Allow the cake to cool completely in the pan for about an hour, helping the layers to firm up.
  10. Chill or Serve: Transfer the cake to the refrigerator to chill and set further or serve it at room temperature according to preference.
  11. Slice Carefully: Slice the cake into squares, making sure each piece contains some fresh strawberries for flavor and visual appeal.
  12. Garnish and Serve: Garnish with fresh mint leaves or additional strawberries for a beautiful and fresh finish before serving.

Notes

  • Use fresh, ripe strawberries for the best flavor and texture.
  • Make sure the cream cheese is softened to blend smoothly with the sugar and lemon juice.
  • Do not overmix the cake batter to keep the cake light and fluffy.
  • Allow the cake to cool completely for easier slicing and better flavor development.
  • The cake can be stored in the refrigerator for up to 3 days, covered tightly.
