- 1 3/4 cup creamy non-dairy milk
- 1/4 cup unsweetened vegan yogurt (or replace with milk)
- 2 tablespoons grade A maple syrup
- 1 teaspoon vanilla extract
- Juice of 1/2 small lemon
- Pinch of salt
Remaining Ingredients:
- 2 cups quick-cooking or rolled oats
- 2 tablespoons chia seeds (or ground flaxseed)
- 3/4 cup diced strawberries
- Topping suggestions: nut butter, hemp hearts, almonds, etc.
Instructions
- Make the Strawberry “Milk”: Blend strawberries, milk, yogurt, maple syrup, vanilla, lemon juice, and salt until smooth.
- Mix: Combine oats, chia seeds, and chopped strawberries in a bowl. Pour in the strawberry milk and stir to combine. Let sit for 5 minutes, then mix again.
- Store & Serve: Transfer to jars, refrigerate for at least 4 hours or overnight. Top with desired toppings before enjoying.
