  • 1 3/4 cup creamy non-dairy milk

  • 1 teaspoon vanilla extract
  • Juice of 1/2 small lemon
  • Pinch of salt

Remaining Ingredients:

  • 2 cups quick-cooking or rolled oats
  • 2 tablespoons chia seeds (or ground flaxseed)
  • 3/4 cup diced strawberries
  • Topping suggestions: nut butter, hemp hearts, almonds, etc.

Instructions

  1. Make the Strawberry “Milk”: Blend strawberries, milk, yogurt, maple syrup, vanilla, lemon juice, and salt until smooth.
  2. Mix: Combine oats, chia seeds, and chopped strawberries in a bowl. Pour in the strawberry milk and stir to combine. Let sit for 5 minutes, then mix again.
  3. Store & Serve: Transfer to jars, refrigerate for at least 4 hours or overnight. Top with desired toppings before enjoying.
