Instructions
- Preheat Oven: Preheat oven to 350°F and grease 2 regular muffin pans with nonstick cooking spray.
- Cream Butter and Sugar: In a large bowl, cream together the butter and sugar until light and fluffy. Scrape down the sides of the bowl.
- Add Egg and Extracts: Mix in the egg and extracts until smooth.
- Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and baking soda.
- Form Dough: Add the flour mixture to the wet ingredients and mix until dough forms. Do not overmix.
- Shape Cookie Cups: Press 2 tablespoons of dough into each cupcake pan, halfway up the sides.
- Bake: Bake for 12 minutes, then cool and shape into cups.
- Make Frosting: Beat cream cheese and butter until smooth, add powdered sugar, vanilla, milk, and food coloring. Adjust consistency with more milk or sugar.
