Marinade:
- 1/2 cup olive oil
- 5 cloves garlic, minced
- 2 lemons, juiced
- 1 lemon, zested
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- 2 teaspoons fresh rosemary, chopped
- 1 tablespoon fresh parsley, chopped
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
Chicken:
- 6 large chicken breasts (approximately 4 pounds)
Instructions
- Prepare the marinade. Add all ingredients for the marinade to a large shallow mixing bowl. Mix well to combine.
- Marinate the chicken. Add the chicken breasts to the marinade and coat well. Marinate for at least 30 minutes to two hours.
- Prepare the grill. Clean and oil grill grates, then set grill to medium-high heat.
- Grill the chicken. Place chicken on the grill, cook for 5 minutes, then reduce heat. Flip and continue grilling until chicken reaches 160 degrees F.
- Allow chicken to rest. Remove from grill, tent with foil, let rest for 5 minutes, then slice and serve.
Notes
- For extra flavor, you can add chopped red onion and bell peppers to the marinade.
- Make sure to let the chicken rest after grilling to allow the juices to redistribute.
