  • ½ cup Sherry Cooking Wine
  • 3 tbsp Salted Butter
  • ¼ cup all-purpose flour
  • 2 cups Fish Stock/Broth (or chicken or vegetable broth)
  • ½ cup Heavy Cream
  • 1 tbsp Tarragon (chopped)
  • 1 tsp Salt (plus more to taste)

For the Crust:

  • 1 sheet Puff pastry
  • 1 egg (whisked, for egg wash)

Instructions

  1. Preheat Oven: Pre-heat your oven to 400º Fahrenheit.
  2. Prepare Lobster: Break down the lobster to retrieve all necessary meat.
  3. Thaw Pastry: Allow puff pastry to thaw.
  4. Prepare Vegetables: Dice shallots, potatoes, celery, and slice carrots.
  5. Prepare Aromatics: Mince garlic and tarragon.
  6. Cook Vegetables: Saute shallots, carrots, celery, and potatoes in olive oil.
