- 2 Yukon gold potatoes (peeled & diced)
- ½ cup Sherry Cooking Wine
- 3 tbsp Salted Butter
- ¼ cup all-purpose flour
- 2 cups Fish Stock/Broth (or chicken or vegetable broth)
- ½ cup Heavy Cream
- 1 tbsp Tarragon (chopped)
- 1 tsp Salt (plus more to taste)
For the Crust:
- 1 sheet Puff pastry
- 1 egg (whisked, for egg wash)
Instructions
- Preheat Oven: Pre-heat your oven to 400º Fahrenheit.
- Prepare Lobster: Break down the lobster to retrieve all necessary meat.
- Thaw Pastry: Allow puff pastry to thaw.
- Prepare Vegetables: Dice shallots, potatoes, celery, and slice carrots.
- Prepare Aromatics: Mince garlic and tarragon.
