Instructions

  1. Step One: Preheat the oven to 350 degrees Fahrenheit. Coat two loaf pans with cooking spray.
  2. Step Two: In a large bowl, mix oil, eggs, sugar, and vanilla. In a separate bowl, combine flour, cinnamon, baking soda, cream of tartar, and salt. Mix dry ingredients into wet ingredients. Add zucchini and mix. In a small bowl, combine sugar, cinnamon, and cream of tartar for topping.
  3. Step Three: Fill half of each loaf pan with batter, sprinkle topping mixture, add remaining batter, and top with sugar mixture. Bake for 45-50 minutes. Cool on a wire rack before serving.
