  • 2 large eggs

  • 2 cups shredded zucchini (about 2 medium)
  • 1 cup chopped walnuts or pecans (optional)

Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons milk or cream

Instructions

  1. Preheat Oven: Preheat oven to 350°F (175°C) and grease/flour a 9×13-inch baking pan.
  2. Prepare Dry Ingredients: Whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves in a large bowl.
  3. Combine Wet Ingredients: Cream butter, oil, and sugar until fluffy. Add eggs one at a time, then vanilla.
  4. Mix Batter: Combine dry and wet ingredients, then fold in zucchini and nuts.
  5. Bake: Spread batter in the pan and bake for 25-30 minutes until a skewer comes out clean.
  6. Make Frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in vanilla and milk/cream.
