Dry Ingredients:

Wet Ingredients:
- 1/2 cup unsalted butter, softened
- 1/2 cup vegetable oil
- 1 3/4 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups shredded zucchini (about 2 medium)
- 1 cup chopped walnuts or pecans (optional)
Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/2 cup unsalted butter, softened
- 4 cups powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons milk or cream
Instructions
- Preheat Oven: Preheat oven to 350°F (175°C) and grease/flour a 9×13-inch baking pan.
- Prepare Dry Ingredients: Whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves in a large bowl.
- Combine Wet Ingredients: Cream butter, oil, and sugar until fluffy. Add eggs one at a time, then vanilla.
- Mix Batter: Combine dry and wet ingredients, then fold in zucchini and nuts.
- Bake: Spread batter in the pan and bake for 25-30 minutes until a skewer comes out clean.
- Make Frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar, then mix in vanilla and milk/cream.
- Frost Bars: Once bars are cool, spread frosting evenly over the top.
- Serve: Cut into squares and enjoy!
