Instructions

  1. Brew Coffee: Brew 1 cup of strong coffee and allow it to cool completely to avoid soggy ladyfingers.
  2. Melt White Chocolate: In a heatproof bowl, melt the white chocolate over simmering water or in the microwave until smooth, then set aside to cool slightly so it doesn’t curdle when mixed.
  3. Prepare Mascarpone Mixture: In a mixing bowl, combine mascarpone cheese, melted white chocolate, granulated sugar, and vanilla extract. Whip the mixture until creamy and smooth.
  4. Soak Ladyfingers: Quickly dip each ladyfinger into the cooled coffee, making sure not to soak them too long to retain some firmness.
  5. Assemble Layers: In a rectangular dish, lay a single layer of soaked ladyfingers. Spread half of the mascarpone mixture over them, then sprinkle half of the fresh raspberries evenly. Repeat the layering with the remaining ladyfingers, mascarpone mixture, and raspberries.
  6. Chill: Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow flavors to meld and the dessert to set properly.
