Zucchini Bread:

  • 2 cups Grated Zucchini (about 2 zucchinis)
  • 3/4 cup Oil (such as canola)
  • 3/4 cup Brown Sugar
  • 1/2 cup Sugar
  • 2 large Eggs
  • 2 teaspoons Vanilla
  • 2 cups Flour
  • 3/4 teaspoon Baking Soda
  • 1/2 teaspoon Baking Powder
  • 1 teaspoon Salt
  • 1 teaspoon Cinnamon
  • 1/8 teaspoon Nutmeg

Instructions

  1. Preheat oven: Preheat the oven to 350 degrees Fahrenheit. Grate the zucchini and place it in a large bowl.
  2. Mix wet ingredients: Add oil, brown sugar, sugar, eggs, and vanilla to the grated zucchini. Stir until well combined.
  3. Add dry ingredients: Fold in the flour, baking soda, baking powder, salt, cinnamon, and nutmeg until just combined.
